Raspberry Protein Bliss Balls

(Makes 24 balls or 12 serves)

Ingredients

1 cup raw cashews

2 cups desiccated coconut

1 cup frozen Raspberries

4 tablespoons maple syrup

Zest of 2 limes

1/2 cup extra desiccated coconut, for rolling

The How To...

1. Soak the cashews in water overnight

2. Drain the cashews thoroughly

3. Place all the ingredients in a food processor and blend until very well combined forming a paste

4. Wearing latex free gloves, roll the mixture into balls and then roll in the extra coconut.

5. Allow to set in the fridge. They will keep in the fridge for 1-2 weeks
